Abstract: The gastrointestinal tract’s interactions with dietary fibers may have an impact on the potential bioactivities of phenolic compounds. In this study, the adsorption process in simulated gastric and intestinal fluid electrolyte solutions was used to investigate the interactions between apple phenolic compounds and -glucan (a dietary fiber). Apple phenolic compounds were extracted, adsorbed onto -glucan over a two-hour period at 37 °C in electrolyte solutions made from gastric or intestinal fluid, and then identified using high performance liquid chromatography. In the gastric fluid, phenolic compounds such as flavan-3-ols, flavonols, phenolic acids, and dihydrochalcone were stable (pH 3). Flavan-3-ols were not present and chlorogenic acid isomerized in the intestinal fluid (pH 7). Up to 182 and 897 mg per gram of apple peel and up to 28 and 7 mg per gram of apple flesh, respectively, were adsorbed onto -glucan in the gastric and intestinal fluids. The initial concentration of the polyphenols and -glucan as well as the environment had an impact on the adsorption (either gastric or intestinal fluid electrolyte solution). The amount of adsorbed polyphenols increased as the initial polyphenol concentration rose. The amount adsorbed was reduced as the amount of -glucan increased. The findings may be useful in explaining how phenolic compounds behave in the digestive system.
